Mango Sago Pomelo w/o sago and pomelo...

Mango Sago Pomelo (better known as 杨枝甘露)
Learned of this recipe from Noob Cook.

Ingredients(Serves 4):
- 400ml Mango Juice (substituted with Marigold
PeelFresh)
- 150ml Evaporated Milk
- 2 large ripe Honey Mangoes, cubed
- Sugar Syrup by mixing 2 table spoon caster sugar with just enough hot water to dissolve
- 80g Pearl Sago, soak in water for 20 minutes till white and enlarged, then rinsed
- Pomelo, peeled and sacs separated, about 50g or more

Directions:
1) Boil a pot of water, add sago and boil for a short while till the sago is transparent. Run the cooked sago through a fine sieve and running water to remove excess starch. Set aside.
2) Reserve one quarter of the cubed mangoes for garnishing. In a blender, blend the rest of the mangoes and the evaporated milk for a short while till well mixed.
3) Mix mango smoothie prepared in step 2 with mango juice. Add sugar syrup to taste. Add cooked pearl sago prepared in step 1 to the mixture. Chill in fridge.
4) To serve, portion out to individual serving bowls and garnish with pomelo sacs and cubed mangoes.

Experience:
Mr. Robotic had been warned by Mdm. Agaration that sago is a hard thing to get right and was she right on the money for this. Mr. Robotic didn't manage to get the sago to boil to the right texture. It turned out all squishy... nothing like sago. To ensure that the dessert don't turn out to be a disaster, Mr. Robotic decided to throw the failed batch of sago away which is definitely a right decision. Pomelo is an ingredient that is hard to get (Mr. Robotic didn't manage to get any from the supermarkets) so that was left out too.

Fortunately, notwithstanding that ingredients are missing, the dessert still came out nice. Those who tasted it said that it was Mr. Robotic's most successful dessert to date. It is a tad on the sweet side so Mr. Robotic wouldn't recommend having it everyday. But it is a simple dessert and serving it chilled makes it a most suitable dessert for the warm climate in Singapore!
